Description
This symposium will focus on many current topics affecting the food service operations of the long term care facilities in Kentucky. Evaluation and management of dysphagia in long term care presented by Michelle Y. Gibson, MS, CCC/SLP, with Western Kentucky Speech and Swallowing, Understand anatomy and physiology of the swallow viewed in the Fiberoptic Evaluation of Swallowing (FEES) procedure. Learn to identify residents who are appropriate for FEES in long term care. Explain the risk indicators for aspiration pneumonia and dysphagic patients appropriate and inappropriate for tube feeding.

Also on the agenda will be FDA 2005 Food Code, which Kentucky has adopted. This new food code went into effect on May 1, 2010. Implementation of the 2005 Food Code will bring Kentucky in line with national standards, according to the District Health Departments. Susan Palmer, Registered Dietician with Dietary Consultants will be the presenter. In addition, Ruth Nelson, RN, PMD Corporation’s Nurse Consultant, will present on the Minimum Data Set (MDS) 3.0 for Dietary Professional focus on Section’s G and K and look at ways Infection Control is affecting the Dietary Department and ways to present deficiencies in this area as presented by Barry Bortz, Chemical & Beverage Product Specialist with Gordon Food Service.

Cancellations must be made in writing and may be faxed or mailed to KAHCF. Cancellations by phone will not be accepted. Cancellations received no later than September 20th will receive a full refund. Cancellations received between September 21st and September 27th will receive a refund of ½. Registrants who do not attend or who do not complete the full seminar will not receive a refund unless prior written notice is given to the KAHCF office.
